Toolbar choose Content Edit > Tools > Edit Content
Select the text box you want to edit or format
To enter new text content inside text box, insert the mouse cursor into right place, key in the new text.
To remove the text, press Delete button to remove it.
To format the existing text, select the text, and click text formatting commands on the toolbar. Available text formatting commands are Font Family, Font Size, Bold, Italic, Underline, Strikethrough, Text Highlight Color, Text Color.
Toolbar choose Content Edit > Text Edit > Add Text
Place the mouse cursor in the document at the location where you want to add a new text box, drag to define the width of the text block.
Type the text content
To resize the text box, drag one of the 8 resize handles.
To move the text box, place the mouse cursor over the moving handles above the left top of the bounding box. When the cursor changes to Move pointer, drag the text box to the new location.

In the example let's say I wanted to whiteout the word "Name" after "Company", and replace it with "Address".

Method 1:
Add a comment text box, with a white fill in color and white border to white out "Name" after Company.
Create the text "Address", then drag it over the white box.
Redact the area you want to cover
Set redact property "Redacted Area Fill Color" to background color
Create the text you wanted, type the text, then drag it over the white box.
Or create a comment text box, type the text, then flatten the text box.
Go to PDF toolbar "Content Edit", and select "Edit Content" under group "Tools"
Select the text you want to white out/override.
Delete the selected text by pressing DELETE\Backspace key.
Enter the text.
Create a white space image file
Import it into your pdf using "Add Image"
Alter the size as required, and move to the area you want to cover.
Create a text layer using "Add Text" which you can move over your white image.
Analysis:
Some solutions are using commenting text box. Text box will be a visible alteration in editing and
commenting mode and can be shifted by the receiver, revealing that a workaround was used.
Using text box or image to cover the area, the original text content is still there, users are easy to get it using text copy paste function. To protect sensitive information, you'd better choose redaction function.
